🥗 Grilled Chicken with Avocado & Veggies

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp cumin (optional)

  • Salt and black pepper to taste

  • Juice of ½ lemon or lime

For the Veggies:

  • 1 zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • ½ red onion, sliced

  • 1 tbsp olive oil

  • Salt, pepper, and Italian herbs (or oregano)

Topping:

  • 1 ripe avocado, diced

  • Fresh cilantro or parsley (optional)

  • Extra lime/lemon juice for drizzling


🔥 Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix olive oil, garlic powder, paprika, cumin, salt, pepper, and lemon/lime juice.

    • Rub this mixture over the chicken breasts.

    • Let it marinate for at least 20–30 minutes (or up to 2 hours in the fridge for deeper flavor).

  2. Grill the Chicken:

    • Preheat your grill or grill pan over medium-high heat.

    • Grill chicken for about 5–6 minutes per side or until cooked through (internal temp of 165°F / 74°C).

    • Remove from heat and let rest for a few minutes before slicing.

  3. Cook the Veggies:

    • While the chicken is resting, toss the veggies in olive oil, salt, pepper, and herbs.

    • Grill or sauté them for 5–7 minutes until tender and slightly charred.

  4. Assemble the Plate:

    • Slice the grilled chicken.

    • Serve over the grilled veggies.

    • Top with diced avocado.

    • Squeeze fresh lime/lemon juice over everything.

    • Garnish with cilantro or parsley, if using.
