Gourmet Mushroom & Chicken Cassolette
Ingredients (Serves 4)
For the Base

2 tbsp butter

1 tbsp olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 cup mushrooms, sliced (cremini or button)

1 cup cooked chicken, shredded or cubed

1 tbsp flour
-
½ cup white wine (optional — replace with chicken broth if preferred)

1 cup chicken broth
-
½ cup heavy cream
-
½ tsp black pepper
-
½ tsp paprika

Salt to taste

1 tbsp fresh thyme or parsley, chopped
For the Topping
-
½ cup grated Gruyère or mozzarella cheese

¼ cup breadcrumbs
-
1 tbsp melted butter
-
Fresh herbs for garnish
Instructions
1. Sauté the base
Heat butter and olive oil in a skillet. Add onions and sauté until soft. Add garlic and cook for 30 seconds.
2. Add mushrooms
Add sliced mushrooms and cook until golden and their moisture evaporates.
3. Add chicken & thickener
Add shredded chicken. Sprinkle flour and mix well for 1 minute to remove raw taste.
4. Deglaze & simmer
Pour in white wine (or broth). Let it reduce by half.
Add chicken broth, heavy cream, pepper, paprika, and salt.
Simmer 5–7 minutes until creamy and thick.
5. Prepare topping
Mix breadcrumbs with melted butter.
6. Assemble
Transfer the creamy chicken-mushroom mixture into mini casseroles/ramekins.
Top with cheese and then buttered breadcrumbs.
7. Bake
Bake at 400°F (200°C) for 12–15 minutes until golden and bubbly.
8. Serve
Garnish with fresh herbs and serve hot with crusty bread.
