🥒 Golden Zucchini Veggie Fritters With Suluguni Cheese
⭐ Ingredients:

2 medium golden zucchinis (or green if golden isn’t available), grated

1 small carrot, grated (optional for color and sweetness)

1 small onion, finely chopped or grated

1 clove garlic, minced

100g suluguni cheese, crumbled or grated

2 tbsp fresh herbs (dill, parsley, or chives), chopped

2 eggs
-
3–4 tbsp flour (or breadcrumbs/oat flour for gluten-free)

Salt & pepper, to taste

Olive oil or neutral oil for frying
🔪 Instructions:

Prep the Zucchini:
Grate the zucchini and place it in a colander. Sprinkle with a little salt and let it sit for 10–15 minutes to draw out moisture. Then, squeeze out as much liquid as you can using a clean towel or cheesecloth. -
Mix the Batter:
In a bowl, combine the zucchini, carrot (if using), onion, garlic, suluguni cheese, herbs, eggs, flour, salt, and pepper. Mix until well combined. The mixture should be moist but hold together. -
Fry the Fritters:
Heat a non-stick pan over medium heat with a little oil. Drop spoonfuls of the mixture into the pan, flatten slightly, and fry for about 2–3 minutes per side, or until golden and crisp. -
Serve:
Serve warm with Greek yogurt, tzatziki, or a simple herbed sour cream dip. A squeeze of lemon on top works wonders.
