🥬 Ingredients:

  • 1 medium green cabbage (or Savoy), cut into 2-inch thick wedges

  • 4 tbsp unsalted butter (melted)

  • 3 tbsp olive oil

  • 5 cloves garlic, minced

  • 1 tsp smoked paprika (optional)

  • Salt & black pepper, to taste

  • ½ cup grated Parmesan cheese

  • ¼ cup grated mozzarella (optional for extra meltiness)

  • 2 tbsp chopped fresh parsley (for garnish)

  • ½ lemon (for a squeeze at the end, optional)


🍳 Instructions:

1. Prep the Cabbage

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

  • Slice the cabbage into thick, sturdy wedges or rounds so they hold their shape.


2. Make the Garlic Butter

  • In a small bowl, mix melted butter, olive oil, minced garlic, smoked paprika, salt, and pepper.


3. Roast the Cabbage

  • Place cabbage wedges on the baking sheet.

  • Brush generously with the garlic-butter mixture.

  • Roast in the oven for 20–25 minutes, flipping halfway until cabbage is tender and edges are caramelized.


4. Add Cheese

  • Sprinkle roasted cabbage with Parmesan and mozzarella.

  • Return to the oven and bake for another 8–10 minutes, or until the cheese is golden, bubbly, and slightly crisp.


5. Finish & Serve

  • Remove from oven, squeeze a little fresh lemon juice for brightness.

  • Sprinkle with fresh parsley.

  • Serve hot as a side dish or even as a light vegetarian main course.


💡 Tips:

  • For deeper flavor, drizzle a little balsamic glaze before serving.

  • If you like spice, add a pinch of red chili flakes to the garlic butter.

  • Works well with purple cabbage too — just note it will be slightly sweeter.
