1 medium green cabbage (or Savoy), cut into 2-inch thick wedges

4 tbsp unsalted butter (melted)

3 tbsp olive oil

5 cloves garlic, minced

1 tsp smoked paprika (optional)

Salt & black pepper, to taste

½ cup grated Parmesan cheese

¼ cup grated mozzarella (optional for extra meltiness)

2 tbsp chopped fresh parsley (for garnish)

½ lemon (for a squeeze at the end, optional)
🍳 Instructions:
1. Prep the Cabbage

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Slice the cabbage into thick, sturdy wedges or rounds so they hold their shape.
2. Make the Garlic Butter

In a small bowl, mix melted butter, olive oil, minced garlic, smoked paprika, salt, and pepper.
3. Roast the Cabbage

Place cabbage wedges on the baking sheet.

Brush generously with the garlic-butter mixture.

Roast in the oven for 20–25 minutes, flipping halfway until cabbage is tender and edges are caramelized.
4. Add Cheese

Sprinkle roasted cabbage with Parmesan and mozzarella.

Return to the oven and bake for another 8–10 minutes, or until the cheese is golden, bubbly, and slightly crisp.
5. Finish & Serve

Remove from oven, squeeze a little fresh lemon juice for brightness.

Sprinkle with fresh parsley.
