Garlic Mushroom Chicken Bites
Ingredients
2 lbs chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tsp paprika
1 tbsp butter
8 oz mushrooms, sliced
6 cloves garlic, minced
1/4 cup chicken broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
1 tbsp fresh parsley, chopped (for garnish)
Directions
In a large bowl, season the chicken bites with salt, black pepper, and paprika. Toss to coat evenly.
Heat olive oil in a large skillet over medium-high heat. Add the chicken bites and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the butter and melt over medium heat. Add the sliced mushrooms and cook until they are golden brown and tender, about 5 minutes.
Add the minced garlic to the skillet and cook until fragrant, about 1 minute.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Allow the broth to simmer for 2-3 minutes.
Stir in the heavy cream and grated Parmesan cheese. Return the chicken bites to the skillet and stir to coat with the sauce. Cook for an additional 2-3 minutes until the sauce is thickened and the chicken is heated through.
Garnish with chopped fresh parsley before serving.
