🍗 Garlic Herb Chicken with Roasted Potatoes & Green Beans

📝 Ingredients:

For the Chicken:

  • 2 large boneless skinless chicken breasts

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp fresh parsley (or 1 tsp dried)

  • 1 tsp dried basil

  • 1 tsp paprika

  • Salt & pepper to taste

  • Juice of 1/2 lemon (optional, for brightness)

For the Potatoes:

  • 1 lb baby potatoes, halved

  • 1 tbsp olive oil

  • 1 tsp dried herbs (thyme, oregano, or Italian mix)

  • Salt & pepper

For the Green Beans:

  • 8 oz fresh green beans, trimmed

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • Salt to taste


🔥 Instructions:

1. Preheat the oven to 400°F (200°C).

2. Prepare the chicken:

In a small bowl, mix olive oil, garlic, herbs, paprika, salt, and pepper. Rub the mixture all over the chicken breasts. Let it marinate while prepping the rest.

3. Toss the potatoes:

In a bowl, toss halved potatoes with olive oil, herbs, salt, and pepper. Spread them on one side of a large baking tray or oven-safe dish.

4. Bake first round:

Add chicken breasts to the center of the tray. Bake for 20 minutes.

5. Add green beans:

Toss green beans with olive oil, garlic, and salt. Add to the tray after 20 minutes, around the chicken and potatoes. Return to oven and bake for another 15–20 minutes, or until chicken reaches 165°F (75°C) internally and potatoes are golden and tender.

6. Rest and serve:

Let the chicken rest for 5 minutes before slicing. Serve everything straight from the tray for easy cleanup!

  • Add a splash of balsamic glaze or lemon juice at the end for extra zing.

  • Swap green beans for asparagus or broccoli if preferred.
