🍝 Garlic Herb Beef Spaghetti with Colorful Peppers

🛒 Ingredients (Serves 4–6)

  • 12 oz spaghetti

  • 1 lb ground beef (or thinly sliced sirloin)

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 small onion, diced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 orange or green bell pepper, thinly sliced

  • 1 tsp dried Italian seasoning

  • ½ tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • ½ tsp salt (or to taste)

  • ½ tsp black pepper

  • ½ cup beef broth or reserved pasta water

  • ½ cup grated Parmesan cheese

  • 2 tbsp chopped fresh parsley or basil


🔥 Instructions

1️⃣ Cook the Pasta

  • Bring salted water to a boil.

  • Cook spaghetti according to package directions until al dente.

  • Reserve ½ cup pasta water before draining.


2️⃣ Cook the Beef

  • Heat olive oil in a large skillet over medium-high heat.

  • Add ground beef and cook until browned. Drain excess grease if needed.

  • Season with salt and pepper.


3️⃣ Add Aromatics & Peppers

  • Stir in onion and cook 2–3 minutes.

  • Add garlic and cook 30 seconds until fragrant.

  • Add sliced bell peppers and cook 4–5 minutes until slightly softened but still vibrant.


4️⃣ Build Flavor

  • Stir in Italian seasoning, oregano, and red pepper flakes.

  • Add beef broth (or pasta water) and simmer 2–3 minutes to combine flavors.


5️⃣ Combine

  • Add drained spaghetti to the skillet.

  • Toss well to coat.

  • Stir in Parmesan and fresh herbs.

  • Add a splash more pasta water if needed for a silky finish.
