🍳 Instructions
1. Prep the Veggies
-
Preheat your oven to 425°F (220°C).
-
Toss chopped veggies with olive oil, garlic powder, Italian seasoning, salt, and pepper.
-
Spread them in a single layer on a baking sheet.
-
Roast in the oven for 20–25 minutes, stirring halfway, until tender and slightly charred.
2. Cook the Steak Bites
-
While veggies roast, season steak bites generously with salt and pepper.
-
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
-
Add steak in a single layer (do in batches if needed). Sear 1-2 minutes per side until browned. Don’t overcook.

3. Make Garlic Butter Sauce
-
Reduce heat to medium. In the same skillet, add butter.

Return steak bites to the skillet. Toss to coat in the garlic butter sauce for 1 minute.
-
Optional: Sprinkle with red pepper flakes and fresh parsley.
4. Serve
-
Plate the steak bites with a serving of roasted veggies on the side.
-
Spoon extra garlic butter sauce over everything.
-
Serve with crusty bread, mashed potatoes, or cauliflower rice if desired.
🔁 Tips & Variations
-
Add mushrooms to the veggie mix or sauté with the steak.
-
Use ghee instead of butter for a dairy-free version.
