🍤 Garlic Butter Shrimp & Corn Bake (One-Pan, 30 Minutes)

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined

  • 2 ears corn on the cob, cut into 2-inch pieces (or use 2 cups frozen corn kernels)

  • 4 tbsp unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 tsp paprika (optional, for color & flavor)

  • ½ tsp chili flakes (optional, for heat)

  • Salt and freshly ground black pepper, to taste

  • 2 tbsp fresh parsley, chopped

  • 1 lemon, cut into wedges

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper or lightly grease it.

  2. In a large bowl, combine melted butter, minced garlic, paprika, chili flakes, salt, and pepper. Mix well to create a flavorful garlic butter sauce.

  3. Add the shrimp and corn to the bowl and toss until everything is evenly coated.

  4. Spread the shrimp and corn in a single layer on the prepared baking sheet.

  5. Bake for 12–15 minutes, or until shrimp turn pink, firm, and slightly glossy. Stir halfway through for even cooking.

  6. Remove from the oven, sprinkle with fresh parsley, and squeeze lemon juice over the top.

  7. Serve hot — straight from the pan — with extra lemon wedges on the side.

Tips:

  • Add baby potatoes or zucchini rounds to the tray if you want extra veggies.

  • For a smoky flavor, swap paprika with smoked paprika.

  • Pair it with a light salad, garlic bread, or steamed rice for a complete meal.
