Instructions:
STEP 1: PREP THE SCALLOPS

Pat scallops thoroughly dry with paper towels — this ensures a golden, crispy sear.

Season both sides with salt and pepper.
STEP 2: SEAR THE SCALLOPS

Heat 1 tbsp butter and olive oil in a large skillet over medium-high heat.

Once hot and shimmering, carefully place scallops in the pan without crowding.
