Ingredients:

  • 1 lb sea scallops (patted dry with paper towels)

  • 2 tbsp unsalted butter (divided)

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • Salt and pepper, to taste

  • 1 tbsp lemon juice

  • 1 tsp red pepper flakes (optional, for heat)

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions:

STEP 1: PREP THE SCALLOPS

  • Pat scallops thoroughly dry with paper towels — this ensures a golden, crispy sear.

  • Season both sides with salt and pepper.

STEP 2: SEAR THE SCALLOPS

  • Heat 1 tbsp butter and olive oil in a large skillet over medium-high heat.

  • Once hot and shimmering, carefully place scallops in the pan without crowding.

  • Sear for 2–3 minutes per side, until golden brown and opaque. Remove and set aside.

STEP 3: MAKE THE GARLIC BUTTER SAUCE

  • Lower the heat to medium, add the remaining 1 tbsp butter to the same pan.

  • Add the minced garlic and sautĂ© for 30–60 seconds, just until fragrant (do not burn).

  • Stir in lemon juice and red pepper flakes, if using.

STEP 4: COMBINE & SERVE

  • Return the scallops to the pan and spoon the garlic butter sauce over them to coat.

  • Garnish with chopped fresh parsley and serve immediately.
