Ingredients

  • 1 lb (450g) ground beef
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 package (20 oz) refrigerated cheese tortellini
  • 1 cup beef broth
  • 2 tablespoons unsalted butter
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  • 1. Preheat a large skillet over medium heat.
  • 2. Add olive oil and ground beef to the skillet. Cook until the beef is browned, breaking it up with a spoon as it cooks.
  • 3. Stir in minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for another minute until fragrant.
  • 4. Add the refrigerated cheese tortellini and beef broth to the skillet. Bring to a simmer and cook for about 5-7 minutes, or until the tortellini is cooked through.
  • 5. Stir in unsalted butter until melted.
  • 6. Add fresh spinach to the skillet and cook until wilted.
  • 7. Sprinkle grated Parmesan cheese over the tortellini mixture and stir until well combined.
  • 8. Garnish with fresh parsley before serving.
