  • 1–2 tbsp brown sugar

  • 1 tsp lemon zest

  • 6–8 oz Brie cheese (sliced, rind on)

  • ½ cup walnuts (toasted & roughly chopped)

  • 1 tbsp fresh thyme (optional)

Hot Honey:

  • 3 tbsp honey

  • ¼–½ tsp chili flakes

For Finishing:

  • 1 egg (for egg wash)

1️⃣ Make the Dough

  • Mix flour, salt & sugar.

  • Cut in cold butter until crumbly.

  • Add ice water gradually until dough forms.

  • Shape into a disk, wrap & chill 30 minutes.

(Skip if using store-bought crust.)


2️⃣ Prepare Filling

  • Toss cranberries with brown sugar and lemon zest.

  • Toast walnuts in a dry pan for 3–4 minutes until fragrant.


3️⃣ Assemble

  • Roll dough into a 10–12 inch circle on parchment.

  • Place Brie slices in center, leaving 2-inch border.

  • Add cranberry mixture on top.

  • Sprinkle walnuts and thyme.

  • Fold edges over filling (rustic style).

  • Brush crust with egg wash.


4️⃣ Bake

  • Bake at 190°C (375°F) for 30–35 minutes until golden and bubbly.
