Ingredients:

Salad

  • Mixed greens (baby spinach, arugula, or spring mix)

  • Pomegranate seeds

  • Sliced apples or pears

  • Dried cranberries

  • Crumbled feta or goat cheese

  • Candied pecans or walnuts

Dressing

  • Olive oil

  • Balsamic vinegar

  • Honey or maple syrup

  • Salt and pepper

Instructions:

  1. Assemble the Salad:
    In a large bowl, layer the greens, pomegranate seeds, apple or pear slices, dried cranberries, cheese, and candied nuts.

  2. Make the Dressing:
    In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

  3. Dress & Serve:
    Drizzle the dressing over the salad just before serving. Toss gently to combine. Enjoy!

Additional Notes:

  • Swap candied nuts for plain toasted pecans or walnuts to lower the sugar and W-W Points.

  • Use light feta or goat cheese to reduce fat content.

  • If desired, add grilled chicken breast for extra protein (adjust points accordingly).
