🌮 Fajita Chicken Casserole

🛒 Ingredients

2 cups cooked chicken, shredded or diced (rotisserie works great)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, thinly sliced
-
1 can (10 oz) diced tomatoes with green chilies (drained)

1 packet fajita seasoning (or 2 tbsp homemade blend*)

1 cup sour cream
-
1 cup shredded cheddar cheese
-
1 cup shredded Monterey Jack or Mexican blend cheese

1 tbsp olive oil
-
Salt & pepper to taste
Optional add-ins:
Black beans, corn, jalapeños, cream cheese, cooked rice.
*Homemade fajita seasoning: chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt.
👩🍳 Instructions
1️⃣ Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
2️⃣ Sauté veggies
Heat olive oil in a skillet over medium heat.
Cook peppers and onion 4–5 minutes until slightly tender.
3️⃣ Mix filling
In a large bowl combine:

Cooked peppers & onion
-
Diced tomatoes

Fajita seasoning
-
Sour cream
-
1½ cups total shredded cheese
Stir until evenly mixed.
4️⃣ Bake
Spread mixture into baking dish.
Top with remaining cheese.
Bake 20–25 minutes until bubbly and golden.
5️⃣ Rest & serve
Let sit 5–10 minutes before serving.
