🐟 Easy Mediterranean Baked Fish
Light, fresh, and packed with bright Mediterranean flavors — perfect for a healthy weeknight dinner.
🧾 Ingredients (Serves 4)

4 white fish fillets (cod, haddock, halibut, or tilapia)

2 tbsp olive oil

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

½ red onion (thinly sliced)

½ cup Kalamata olives (pitted)

1 tsp dried oregano
-
½ tsp paprika
-
½ tsp dried thyme (optional)

Salt & black pepper (to taste)

1 lemon (sliced + extra for juice)

¼ cup fresh parsley (chopped)

¼ cup crumbled feta cheese (optional)
🔥 Instructions
1️⃣ Preheat Oven
Preheat to 400°F (200°C). Lightly grease a baking dish.
2️⃣ Season the Fish
Pat fillets dry. Drizzle with olive oil and season with salt, pepper, oregano, paprika, and thyme.
3️⃣ Add Mediterranean Toppings
Scatter garlic, cherry tomatoes, red onion, and olives around and over the fish.
Place lemon slices on top.
4️⃣ Bake
Bake for 12–15 minutes, depending on thickness, until fish flakes easily with a fork and reaches 145°F internal temperature.
5️⃣ Finish & Serve
Sprinkle with fresh parsley, a squeeze of lemon juice, and feta if using.
