Ingredients:

  • 12 egg roll wrappers
  • 1 cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup pepperoni slices, chopped (or substitute with mushrooms for a vegetarian option)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 cups Nacho Cheese Doritos, crushed into fine crumbs
  • 1 egg, beaten (for sealing)
  • ½ cup all-purpose flour
  • 1 cup buttermilk (or regular milk)
  • Oil for frying

Directions:

  1. Prepare the Filling:
    In a bowl, mix together the pizza sauce, shredded mozzarella, chopped pepperoni, Italian seasoning, and garlic powder. Set aside.

  2. Assemble the Rolls:
    Lay an egg roll wrapper on a clean surface. Place about 1-2 tablespoons of the pizza filling in the center. Brush the edges with beaten egg, then fold the sides over and roll tightly to seal. Repeat with remaining wrappers and filling.

  3. Set Up Breading Station:

    • Place flour in one shallow bowl.
    • Pour buttermilk into a second bowl.
    • In a third bowl, add the crushed Doritos.
  4. Coat the Pizza Rolls:
    Dip each roll into the flour, then into the buttermilk, and finally coat it generously with the crushed Doritos. Press gently to help the crumbs stick.

  5. Fry Until Golden:
    Heat oil in a deep pan to 350°F (175°C). Fry the pizza rolls in batches for about 2-3 minutes per side until crispy and golden brown. Drain on a paper towel.

  6. Serve & Enjoy:
    Let them cool slightly, then serve with extra pizza sauce or ranch dressing for dipping!
