Diabetic-Friendly Magic Cookies

Ingredients:
  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds)
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup sugar-free dark chocolate chips or chopped sugar-free chocolate
  • 1/3 cup mashed ripe banana or unsweetened applesauce (natural sweetener)
  • 1/4 cup natural nut butter (almond, peanut, or cashew butter)
  • 1 tsp vanilla extract
  • Optional: a pinch of cinnamon or a few drops of stevia (to taste)
Instructions:
  • Preheat oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix wet ingredients: In a bowl, combine mashed banana (or applesauce), nut butter, and vanilla extract until smooth.
  • Add dry ingredients: Stir in oats, nuts, shredded coconut, and sugar-free chocolate chips. Mix well to combine.
  • Form cookies: Scoop spoonfuls of the mixture onto the prepared baking sheet, flattening slightly to form cookie shapes.
  • Bake: Bake for 12-15 minutes or until golden around the edges.
  • Cool: Let cookies cool on a wire rack before serving to firm up.
