📝 Ingredients:

500g squid, cleaned and cut into rings

2 tablespoons olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 can (400g) diced tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
🍳 Directions:

Sauté the Onion:
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook for 3–4 minutes, or until soft and translucent. -
Add Garlic:
Stir in the minced garlic and cook for 1–2 more minutes, stirring often to avoid burning. -
Build the Sauce:
Add the diced tomatoes and tomato paste to the skillet.
Stir in the oregano, thyme, red pepper flakes (if using), and season with salt and pepper to taste.
Bring the mixture to a simmer. -
Cook the Squid:
Add the squid rings to the sauce and stir gently.
Simmer for 5–7 minutes, just until the squid is tender.
⚠️ Do not overcook, or the squid may become rubbery. -
Finish and Serve:
Remove from heat. Sprinkle with fresh chopped parsley.
Serve hot with your choice of crusty bread, rice, pasta, or over a bed of sautéed greens.
