Delicious Homemade Potato Cakes

Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1 egg
1/3 cup all-purpose flour (or more if needed for consistency)
1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
2 green onions, finely chopped (optional)
Salt and pepper to taste
Butter or oil for frying
Instructions:
In a bowl, combine mashed potatoes, egg, flour, cheese, green onions, salt, and pepper.
Mix until everything comes together into a soft dough.
Form into patties about 1/2 inch thick. If the mixture is too sticky, add a bit more flour.
Heat a skillet over medium heat with a little butter or oil.
Cook patties for 3–4 minutes per side, until golden brown and crispy.
Serve hot, with sour cream, ketchup, or your favorite dip.
Tips:
Add chopped bacon or cooked onions for extra flavor.
Use gluten-free flour if needed.
