Ingredients

  • 4 large potatoes, peeled & grated

  • 1 cup mushrooms, finely chopped

  • 1½ cups fresh spinach, chopped

  • 2 tbsp olive oil or butter

Instructions

  1. Prepare Potatoes
    Grate the potatoes and squeeze out as much water as possible using a clean cloth—this is key for crispiness.
