  • ½ tsp salt

  • ½ tsp black pepper

  • 1 cup cold sparkling water (or plain water)

In a deep pan, heat oil to 175°C (350°F).

4️⃣ Fry the shrimp:
Dip each shrimp in the batter, let the excess drip off, and fry in batches.

5️⃣ Drain & Serve:
Remove shrimp and drain on paper towels.
Serve hot with garlic mayo, tartar sauce, or chili dip.

💡 Q&A / Tips

Q1: Why use sparkling water?
→ The carbonation makes the batter airy and light, giving extra crunch.

Q2: What’s the right batter consistency?
→ Slightly thick — similar to pancake batter.

Q3: How to check oil temperature without a thermometer?
→ Drop a bit of batter in the oil. If it rises to the surface immediately, it’s ready.

Q4: How to reheat leftovers?
→ Reheat in the oven at 200°C (400°F) for 5–7 minutes to make them crispy again.

Q5: Can I use an air fryer?
→ Yes! Spray shrimp with oil and air fry at 200°C (400°F) for 8–10 minutes, flipping halfway.
