Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup mushrooms, finely chopped

  • ½ cup cream cheese, softened

  • ½ cup shredded mozzarella cheese

  • 3 tbsp butter

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • Salt & pepper, to taste

  • ¼ cup grated Parmesan cheese

  • Fresh parsley, for garnish


Instructions:

  1. Prepare the filling:

    • In a skillet, melt 1 tbsp butter over medium heat.

    • Add garlic and chopped mushrooms, cook until mushrooms release moisture and turn golden brown.

    • Stir in cream cheese, mozzarella, thyme, parsley, salt, and pepper. Mix until creamy. Remove from heat and let cool slightly.

  2. Prepare chicken:

    • Preheat oven to 375°F (190°C).

    • Using a sharp knife, carefully slice a pocket into the side of each chicken breast (don’t cut all the way through).

    • Stuff each breast with the creamy mushroom mixture. Secure with toothpicks if needed.

  3. Cook chicken:

    • In an oven-safe skillet, melt remaining 2 tbsp butter over medium heat.

    • Sear chicken breasts 2–3 minutes per side until golden.

    • Sprinkle Parmesan cheese on top.

  4. Bake:

    • Transfer skillet to the oven and bake for 20–25 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).

  5. Garnish & serve:

    • Remove toothpicks, garnish with fresh parsley, and serve hot with veggies, pasta, or rice.
