* 4 eggs
* 1 cup sautéed spinach + chopped onion
* A pinch of nutmeg
* ½ cup shredded mozzarella
Instructions:
1. Preheat Oven: Preheat your oven to 350°F (175°C).
2. Prepare Spinach Mixture: Sauté the spinach and chopped onion until the spinach is wilted and the onions are translucent. Ensure excess moisture is removed.
3. Combine Ingredients: In a large bowl, mix together the cottage cheese, eggs, sautéed spinach and onion mixture, and a pinch of nutmeg.
4. Add Cheese: Stir in the shredded mozzarella cheese.
5. Pour into Baking Dish: Pour the mixture into a greased or lined baking dish (about 8-inch square or round dish).
6. Bake: Bake in the preheated oven for 30-40 minutes, or until the quiche is set and the top is lightly golden.
7. Cool Slightly: Remove from the oven and let it cool slightly before slicing.
