Ingredients
1 ripe banana
½ cup cottage cheese
2 large eggs
¾ cup rolled oats
½ teaspoon baking powder
¼ teaspoon cinnamon
¼ teaspoon vanilla extract
Pinch of salt
Coconut oil or butter for greasing
Directions
Prepare the Batter
In a blender, combine the banana, cottage cheese, eggs, oats, baking powder, cinnamon, vanilla extract, and salt.
Blend until smooth and let the batter rest for 3–5 minutes.
Cook the Bites
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or butter.
