Sauté the aromatics
Heat oil/butter in a large pot over medium heat.
Add onion, carrots, and celery. Cook 5–6 minutes until softened. -
Add garlic & herbs
Stir in garlic, thyme, rosemary, and bay leaf. Cook 30 seconds until fragrant. -
Add chicken & broth
Place chicken in the pot. Pour in broth until just covered. -
Simmer
Bring to a gentle boil, then reduce heat.
Simmer 20–25 minutes (until chicken is cooked through). -
Shred chicken
Remove chicken, shred, discard bones/skin if needed.
Return meat to the pot. -
Add potatoes
Stir in diced potatoes. Simmer 12–15 minutes until tender. -
Finish
Season with salt and pepper. Remove bay leaf.
Add parsley and optional lemon juice.
Serve hot with crusty bread.
