🥬 Coleslaw with Apples, Cranberries & Almonds
✅ Ingredients
For the slaw:
- 
2 cups shredded green cabbage 
- 
2 cups shredded purple cabbage (optional but pretty!) 
- 
1 large carrot, grated 
- 
1 apple, thinly sliced or julienned (Honeycrisp/Green apple works best) 
- 
1/3 cup dried cranberries 
- 
1/3 cup sliced almonds (toasted if possible) 
- 
2 tbsp chopped parsley (optional) 
For the dressing:
- 
1/3 cup Greek yogurt (or mayo, or half-half) 
- 
1 tbsp honey or maple syrup 
- 
1.5 tbsp apple cider vinegar 
- 
1 tsp Dijon mustard 
- 
Salt & pepper to taste 
- 
1–2 tbsp olive oil (optional for creamier richness) 
👩🍳 Instructions
- 
In a large bowl, combine cabbage, carrot, apple, cranberries, almonds, and parsley. 
- 
In a small bowl, whisk together yogurt, honey, vinegar, mustard, salt, pepper, and olive oil. 
- 
Pour the dressing over the salad and toss well. 
- 
Chill for 15–20 minutes before serving for best flavor. 
💡 Tips
- 
Add sunflower seeds or pumpkin seeds for extra crunch. 
- 
Replace apple with pear for variation. 
- 
Add grilled chicken to turn it into a protein salad. 
- 
If prepping ahead, toss the apple with a little lemon to avoid browning.
