INGREDIENTS
  • 3 lbs Yukon gold potatoes
  • 3-4 ribs celery, diced
  • 2 green onions, sliced
  • 1/2 teaspoon paprika (optional)
FOR THE DRESSING:
  • 1 cup mayonnaise
  • 1/3 cup sweet relish
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon or yellow mustard
  • Kosher salt and freshly ground black pepper, to taste
PREPARATION
  1. Peel potatoes and chop into bite-sized pieces. Add potatoes to a large pot and over with cold salted water by one inch.
  2. Set over high heat and bring to a boil. Cook until fork tender, about 15 minutes. Drain and set aside to cool.
  3. In a large bowl, whisk together the mayonnaise, relish, apple cider vinegar, mustard, salt and pepper.
  4. Add the potatoes, celery, and green onion and stir to combine. Adjust seasoning as needed.
  5. Chill until ready to serve, at least 2 hours. Sprinkle with paprika before serving, if desired. Enjoy!
