200g (7 oz) dark chocolate (around 60โ70% cocoa), chopped

3 large eggs, separated

2 tablespoons granulated sugar

1 cup (240 ml) heavy cream, cold

1 teaspoon vanilla extract

A pinch of salt

1. Melt the chocolate

In a heatproof bowl, melt the chopped dark chocolate over a double boiler (or in the microwave in 20-second bursts).

Let it cool slightly (important so it doesn’t scramble the eggs later).
2. Whip the cream

In a chilled bowl, whip the heavy cream with vanilla extract until soft peaks form.

Set aside in the fridge.
3. Beat the egg whites

In a clean bowl, beat the egg whites with a pinch of salt until they form soft peaks.

Gradually add the sugar, then continue beating until stiff peaks form.
4. Add yolks to chocolate

Stir the egg yolks into the slightly cooled melted chocolate until smooth.
5. Combine everything

Gently fold the whipped cream into the chocolate mixture using a spatula.

Then gently fold in the beaten egg whites in 2-3 additions. Be careful not to deflate the mousse.
6. Chill

Spoon the mousse into serving jars or cups.

Chill for at least 1โ2 hours, or until set.
7. Garnish and serve

Top with chocolate shavings, fresh raspberries, and a dusting of powdered sugar like in the photo.
