Ingredients
  • 3 cups uncooked elbow macaroni
  • 1 cup celery, diced
  • 1/2 cup carrots, peeled and shredded
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, diced
For the dressing:
  • 1 1/2 cups mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 2 tablespoons sweet relish
  • 1/2 tablespoon yellow mustard
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. In a large pot of salted boiling water, cook the macaroni according the package instructions. Drain and rinse under cold water to stop the cooking.
  2. In a bowl large enough to fit the salad, make the dressing:
  3. Whisk together the mayonnaise, apple cider vinegar, sugar, relish, mustard, and salt and pepper.
  4. Add the celery, carrots, bell pepper, red onion, and cooked macaroni and stir until well coated.
  5. Taste, and adjust seasoning as needed.
  6. Chill at least 1 hour before serving and enjoy!
