Ingredients:
For the Cookie Base:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt

 


For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract

 


For the Cinnamon Sugar Coating:
1/4 cup granulated sugar
1 1/2 tsp ground cinnamon

Directions:
Prepare the Cookie Base:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Roll the dough into 1 1/2-inch balls and place them on the prepared baking sheet, slightly flattening each one with your hand.

 


Prepare the Cheesecake Filling:
In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

 


Assemble the Cookies:
Create a small indentation in the center of each flattened cookie dough ball with your thumb.
Spoon about 1/2 to 1 teaspoon of the cheesecake filling into the center of each cookie.

 


Cinnamon Sugar Coating:
In a small bowl, mix together the granulated sugar and ground cinnamon.
Sprinkle the cinnamon sugar mixture generously over each cookie, coating the top and sides.

 


Bake the Cookies:
Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are set and slightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
