🥣 Chicken Vegetable Soup  Recipe

Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 2 carrots, sliced

  • 2 celery sticks, sliced

  • 4–5 garlic cloves, minced

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper

  • 1 tsp paprika (optional)

  • 1 tsp dried thyme or oregano

  • 1 bay leaf

  • 4 cups chicken broth

  • 1–2 cups water (as needed)

  • 2 chicken breasts (or leftover cooked shredded chicken)

  • 1 tbsp lemon juice

  • Fresh dill or parsley, chopped


🥄 Instructions

1. Sauté the vegetables

  • Heat olive oil in a large pot.

  • Add onions, carrots, celery, and cook until softened.

  • Add garlic and sauté 1 minute until fragrant.

2. Add seasonings

  • Mix in salt, pepper, paprika, thyme, and bay leaf.

  • Stir well to coat the vegetables.

3. Add broth & chicken

  • Pour in chicken broth + water.

  • Add raw chicken breasts.

  • Bring to a boil, then reduce to low heat.

4. Simmer

  • Cover and cook for 25–30 minutes, until chicken is tender.

5. Shred the chicken

  • Remove chicken, shred it using two forks.

  • Put shredded chicken back into the soup.

6. Finishing

  • Add lemon juice and fresh dill or parsley.

  • Adjust salt and pepper as needed.

  • Simmer 5 more minutes.


🍲 Serving

Serve hot with:

  • Bread

  • Garlic toast

  • Lemon on the side

  • Extra herbs
