Chicken Thighs with Caramelized Onions & Rice

🧄 Ingredients

Chicken

  • 6 chicken thighs (bone-in or boneless)

  • 2 tbsp olive oil or butter

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • Salt, to taste

  • ½ tsp dried thyme or oregano

Caramelized Onions

  • 3 large onions, thinly sliced

  • 2 tbsp olive oil or butter

  • 1 tsp sugar (optional, for deeper caramelization)

  • Salt, to taste

  • 1 tbsp balsamic vinegar (optional)

Rice

  • 1½ cups basmati rice

  • 3 cups water or chicken broth

  • 1 tbsp oil or butter

  • Salt, to taste


👩‍🍳 Instructions

1. Cook the Rice

  • Wash rice until water runs clear.

  • Boil water/broth with salt and oil.

  • Add rice, cover, and cook on low heat until fluffy. Set aside.

2. Caramelize the Onions

  • Heat oil or butter in a wide pan over medium-low heat.

  • Add onions and a pinch of salt.

  • Cook slowly for 20–25 minutes, stirring often, until deep golden.

  • Add sugar and balsamic vinegar (if using). Set aside.

3. Cook the Chicken

  • Season chicken thighs with paprika, garlic powder, pepper, salt, and herbs.

  • Heat oil in a pan over medium-high heat.

  • Sear chicken skin-side down (if skin-on) until golden.

  • Flip, lower heat, cover, and cook 12–15 minutes until tender and juicy.

4. Combine

  • Spoon caramelized onions over the chicken.

  • Simmer together for 2–3 minutes so flavors combine.


🍽️ To Serve

  • Serve chicken and onions over steamed rice.

  • Drizzle pan juices on top for extra flavor.

  • Garnish with fresh parsley (optional).
