🍽️ Chicken Spinach & Mushroom Low-Carb Oven Dish
Ingredients:

2 tbsp olive oil or butter

1 lb (450g) chicken breast, cut into bite-sized pieces

Salt and black pepper, to taste

2 cups mushrooms, sliced

2 cups fresh spinach

3 cloves garlic, minced

1/2 cup heavy cream (or coconut cream for dairy-free)

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 tsp dried thyme or Italian seasoning

1/4 tsp chili flakes (optional)
Instructions:

Preheat Oven:
Set oven to 375°F (190°C). -
Cook Chicken:
In a skillet, heat olive oil. Add chicken, season with salt & pepper, and cook until lightly golden (about 5–6 minutes). Remove and set aside. -
Sauté Veggies:
In the same pan, add mushrooms and garlic. Cook 3–4 minutes until mushrooms are soft. Add spinach and cook until wilted. -
Make the Creamy Mix:
Stir in heavy cream, mozzarella, Parmesan, and thyme. Mix until the cheese melts and sauce thickens slightly. -
Combine Everything:
Add cooked chicken to the pan, stir to coat in the sauce. -
Bake:
Transfer the mixture to a baking dish. Bake uncovered for 15–20 minutes, until bubbly and slightly golden on top.
