Chicken and Mushroom Alfredo
Ingredients
2 tablespoons olive oil
2 chicken breasts, cubed
Salt and pepper, to taste
8 oz mushrooms, sliced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
8 oz fettuccine or pasta of choice
Fresh parsley, chopped (for garnish)
Directions
Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the cubed chicken, season with salt and pepper, and cook until browned and cooked through. Remove from the skillet and set aside.
Sauté Mushrooms and Garlic: In the same skillet, add the mushrooms and cook until browned, about 5-7 minutes. Add the minced garlic and cook for another minute.
Make the Sauce: Pour in the heavy cream and chicken broth, bringing it to a simmer. Stir in the Parmesan cheese and Italian seasoning. Let the sauce thicken slightly.
Combine: Return the cooked chicken to the skillet and stir to combine. Adjust seasoning if necessary.
Cook Pasta: Meanwhile, cook the pasta according to package instructions. Drain and add to the skillet with the sauce, tossing to coat evenly.
Serve: Garnish with fresh parsley and serve hot.
