🌮🧀 Cheesy Taco Potatoes

🛒 Ingredients (Serves 4–6)

  • 2 lbs russet or Yukon Gold potatoes, diced

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 lb ground beef (or ground turkey)

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • ½ cup water

  • 1½–2 cups shredded cheddar or Mexican blend cheese

  • ½ cup sour cream

  • ½ cup diced tomatoes

  • ¼ cup sliced green onions

  • Optional: jalapeños, avocado, cilantro


🔥 Instructions

1️⃣ Roast the Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Toss diced potatoes with olive oil, salt, and pepper.

  3. Spread on a baking sheet in a single layer.

  4. Roast 30–40 minutes, flipping halfway, until golden and crispy.


2️⃣ Cook the Taco Meat

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.

  2. Stir in taco seasoning and water.

  3. Simmer 3–5 minutes until thickened.


3️⃣ Assemble

  1. Transfer roasted potatoes to a baking dish (or keep on sheet pan).

  2. Spoon taco meat evenly over potatoes.

  3. Sprinkle generously with cheese.

  4. Return to oven for 5–8 minutes until cheese is melted and bubbly.


4️⃣ Add Toppings

Top with sour cream, tomatoes, green onions, and any extras you love.
