Cheesy Ground Beef and Rice Casserole
Ingredients:
1 lb (450g) ground beef
1 small onion, chopped
2 cloves garlic, minced
1 cup long grain white rice (uncooked)
2 1/2 cups beef broth (or water + bouillon)
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of cheddar or cream of chicken soup
1 cup corn kernels (frozen or canned & drained)
1/2 tsp paprika
1/2 tsp dried parsley
Salt & black pepper to taste
2 cups shredded cheddar cheese, divided
Optional garnish: green onions, parsley, or jalapeño slices
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
2. Cook the beef:
In a large skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease.
3. Mix casserole base:
In a large bowl, combine the browned beef mixture, uncooked rice, beef broth, both cans of soup, corn, paprika, parsley, salt, pepper, and 1 cup of cheddar cheese. Stir until well mixed.
4. Assemble:
Pour the mixture into the prepared casserole dish. Spread evenly.
Cover tightly with foil.
5. Bake:
Bake for 60 minutes, covered. Then remove foil, stir gently, and sprinkle the remaining 1 cup of cheese on top.
Bake uncovered for 10–15 more minutes, until cheese is bubbly and rice is tender.
6. Rest & Serve:
Let sit for 5 minutes before serving.
Garnish if desired.
Tips:
You can substitute ground turkey or chicken for the beef.
Add sautéed bell peppers or a can of Rote for extra flavor.
For a spicy twist, mix in taco seasoning or chopped green chilies.
