Ingredients:

  • 1 large egg

  • A pinch of salt

  • 1/4 cup milk

  • 2 cups corn starch (or tapioca flour)

  • 1 cup grated cheese (mozzarella, parmesan, or your favorite)

  • 2 tablespoons melted butter

  • 1 teaspoon baking powder

Instructions:

1. Preheat and prepare:

  • If baking, preheat the oven to 375°F (190°C).

  • If making pancakes, lightly grease a non-stick skillet and preheat it over medium heat.

2. Mix the wet ingredients:

In a large mixing bowl:

  • Beat the egg with the milk, melted butter, and a pinch of salt until smooth.

3. Add the dry ingredients:

  • Gradually add the corn starch or tapioca flour, mixing well to avoid lumps.

  • Stir in the grated cheese and baking powder. The batter should be thick but pourable (like pancake batter). If it’s too thick, add a splash of milk.

4. Cooking options:

Option A: Skillet Pancakes

  • Pour about 1/4 cup of batter onto the hot skillet.

  • Cook for 2–3 minutes on each side or until golden and cooked through.

  • Repeat with remaining batter.

Option B: Oven Baked Cheese Buns

  • Spoon batter into a greased or lined muffin tin (fill about 2/3 full).

  • Bake for 15–20 minutes or until puffed and golden.

Serving Suggestions:

  • Enjoy warm with coffee or tea.

  • Serve with butter, cream cheese, or your favorite dipping sauce.
