Cashew Chicken!
Ingredients :
2 chicken breasts, diced
1/2 cup unsalted cashews
1/2 cup red peppers, diced
1/2 cup green peppers, diced
1/2 cup soy sauce
1/4 cup honey
2 tablespoons of olive oil
2 cloves of garlic, chopped
1 teaspoon grated ginger
1 teaspoon of cornstarch
Salt and pepper to taste
Chopped fresh chives for garnish
📝 Instructions:
In a bowl, mix the soy sauce, honey, grated ginger, and cornstarch until you obtain a smooth sauce. Reserve.
2️⃣ In a large skillet, heat the olive oil over medium heat. Add the diced chicken and brown until cooked through. Remove them from the pan and set aside.
3️⃣ In the same pan, add the red and green peppers. Saute them until they are tender.
4️⃣ Add the chopped garlic to the pan and fry for about 30 seconds until it is fragrant.
5️⃣ Add the golden diced chicken to the pan.
6️⃣ Pour the honey soy sauce over the chicken and vegetables. Mix well to coat all ingredients. Simmer for a few minutes to thicken the sauce.
7️⃣ Add the cashews to the pan and mix.
8️⃣ Season with salt and pepper to taste.
9️⃣ Garnish with chopped fresh chives before serving.
