🧂 Ingredients

For the “Noodle” Layers:

  • 8 oz (225 g) cream cheese, softened

  • 3 large eggs

  • 1 ½ cups shredded mozzarella or provolone

  • ½ cup grated Parmesan

  • Pinch of salt


For the Meat Sauce:

  • 1 ½ lb (680 g) ground beef (80/20 blend recommended)

  • ½ lb (225 g) ground pork or Italian sausage (optional)

  • 1 tsp salt (to taste)

  • 1 tsp black pepper

  • 1 tsp garlic powder (optional)

  • 1 tsp onion powder (optional)

  • ½ cup beef broth or bone broth

  • ½ cup ricotta or extra cream cheese (for creaminess)

  • Optional: ½ tsp chili flakes for mild heat


For the Cheese Layers:

  • 1 ½ cups shredded mozzarella

  • ½ cup grated Parmesan

  • ½ cup ricotta or mascarpone

1. Make the “Noodle” Base

  1. Preheat oven to 375°F (190°C).

  2. In a bowl, whisk eggs and cream cheese until smooth.

  3. Mix in mozzarella, Parmesan, and a pinch of salt.

  4. Spread the mixture evenly onto a parchment-lined baking sheet (about 9×13 inch).

  5. Bake for 15 minutes until firm and golden.

  6. Let cool, then slice into lasagna-sized sheets.


2. Prepare the Meat Sauce

  1. In a large skillet over medium heat, cook the beef (and pork if using) until browned.

  2. Drain extra grease if needed.

  3. Add salt, pepper, and optional seasonings.

  4. Stir in beef broth and simmer 5–10 minutes to reduce.

  5. Add ricotta or cream cheese for thickness and richness. Mix well.


3. Assemble the Lasagna

  1. Grease a baking dish (9×9 or similar).

  2. Layer as follows:

    • A thin layer of meat sauce

    • A layer of “noodle” sheets

    • Spoonfuls of ricotta or mascarpone

    • Sprinkle of mozzarella and Parmesan

    • Repeat layers until all ingredients are used.

    • Finish with cheese on top.


4. Bake

Bake uncovered at 375°F (190°C) for 20–25 minutes, or until bubbly and golden.


5. Rest & Serve

Let cool for 10 minutes before slicing (this helps it set).
Serve hot, optionally topped with crispy bacon or extra Parmesan.
