✅ Ingredients:
For the Burgers:

1½ lbs ground beef (80/20 or fattier for carnivore)

Butter or tallow for grilling

4 slices cheddar, provolone, or your cheese of choice (optional)
For the Bacon Jam:

½ lb bacon, chopped

2 tbsp beef tallow or bacon grease

1–2 tbsp water or bone broth (optional for texture)

Pinch of salt (optional — taste first)

(Optional for relaxed carnivore: 1 tbsp finely diced onion or shallot)
🔪 Instructions:
🔥 Step 1: Make the Bacon Jam

In a skillet over medium heat, cook chopped bacon until crispy.

Remove bacon bits and set aside. Leave about 2 tbsp fat in the pan.

(Optional) If using onion, sauté it in the bacon fat until caramelized.

Return bacon to the pan. Add a bit of bone broth or water and simmer on low for 5–10 minutes, stirring often until it becomes thick and jammy.
