A high-fat, high-flavor burger topped with savory bacon jam and melty cheese — no buns, no carbs, all flavor.


✅ Ingredients:

For the Burgers:

  • 1½ lbs ground beef (80/20 or fattier for carnivore)

  • Salt to taste

  • Butter or tallow for grilling

  • 4 slices cheddar, provolone, or your cheese of choice (optional)

For the Bacon Jam:

  • ½ lb bacon, chopped

  • 2 tbsp beef tallow or bacon grease

  • 1–2 tbsp water or bone broth (optional for texture)

  • Pinch of salt (optional — taste first)

  • (Optional for relaxed carnivore: 1 tbsp finely diced onion or shallot)


🔪 Instructions:

🔥 Step 1: Make the Bacon Jam

  1. In a skillet over medium heat, cook chopped bacon until crispy.

  2. Remove bacon bits and set aside. Leave about 2 tbsp fat in the pan.

  3. (Optional) If using onion, sauté it in the bacon fat until caramelized.

  4. Return bacon to the pan. Add a bit of bone broth or water and simmer on low for 5–10 minutes, stirring often until it becomes thick and jammy.

  5. Let cool slightly. Store extras in the fridge.
