Ingredients:
– 1 lb shrimp, peeled and deveined
– 1 lb sausage, sliced (use halal-safe meat)
– 1 bell pepper, chopped
– 1 onion, chopped
– 3 tablespoons veg oil or butter
– 2 tablespoons Cajun seasoning
– 4 cloves garlic, minced
– Salt and pepper to taste
– Fresh parsley, for garnish
Directions:
– Preheat your oven to 400°F (200°C).
– In a large bowl, combine shrimp, sliced sausage, bell pepper, and onion.
– Drizzle with veg oil or butter and sprinkle with Cajun seasoning, garlic, salt, and pepper.
– Toss everything together until well coated.
– Spread the mixture evenly on a sheet pan.
– Bake for 15-20 minutes, or until shrimp are cooked through and sausage is browned.
– Garnish with fresh parsley before serving.
