Cabbage Fat-Burning Soup with Herb Zest

Ingredients:
1 large onion, chopped
2 large carrots, sliced
3 celery stalks, chopped
4 cups green cabbage, chopped
4 cups vegetable broth
2 garlic cloves, minced
1 tsp dried thyme
Salt & pepper, to taste
Fresh parsley, chopped (for garnish)
For the Herb Zest (Optional but amazing):
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped fresh parsley or dill
Pinch of salt
Instructions:
Sauté the base:
In a large soup pot, heat a splash of olive oil over medium heat. Add onion, carrots, and celery. Cook for ~5 minutes, until softened.
Add garlic and cabbage:
Stir in garlic and cabbage. Cook for 3–4 minutes until cabbage begins to wilt.
Simmer the soup:
Add vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until veggies are tender.
Season:
Stir in thyme, salt, and pepper to taste.
Make the herb zest:
Whisk together olive oil, lemon juice, chopped herbs, and a pinch of salt.
Serve:
Ladle soup into bowls and drizzle with herb zest. Garnish with extra parsley.
