Ingredients

  • 1 loaf day-old brioche
  • 150g cream cheese, softened
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries (fresh or frozen)
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup cream
  • 1 teaspoon cinnamon
  • Butter, for frying
  • Extra blueberries, icing sugar, and maple syrup, to serve

Instructions

  1. Beat cream cheese with sugar and vanilla until smooth. Fold in blueberries.
  2. Slice brioche into 8 even pieces. Spread filling on 4 slices and top with remaining slices.
  3. Whisk egg, milk, cream, and cinnamon in a shallow dish.
  4. Soak sandwiches in custard mixture, about 20 seconds per side.
  5. Melt butter in skillet over medium heat. Cook sandwiches for 3-4 minutes per side until golden.
  6. Serve warm with extra blueberries, icing sugar, and maple syrup.
