🍌🧁 Banana Oat Mug Muffins (Oven-Baked in Cups)

📝 Ingredients (Makes 4–6 cup muffins)

3 ripe bananas (medium–large)

2 cups rolled oats

2 eggs

¼ cup honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

½ tsp cinnamon (optional but great)

Pinch of salt

Optional add-ins (choose any):

¼ cup chopped nuts

¼ cup chocolate chips

2 tbsp shredded coconut

🥣 Instructions
1. Preheat

Preheat your oven to 350°F (175°C).
2. Prepare the cups

Use oven-safe coffee cups or mugs like the ones in the photo.

Lightly grease with butter or spray.
3. Mix the batter

In a bowl, mash the bananas until smooth.

Add the eggs, honey/maple syrup, and vanilla. Mix well.

Add oats, baking powder, cinnamon, salt, and any add-ins.

Stir until fully combined. The batter will be thick.
4. Fill the cups

Spoon the mixture into each cup, filling about ¾ full.
5. Bake

Place the cups on a baking tray.

Bake for 25–30 minutes, or until the tops are golden brown and a toothpick comes out clean.
6. Cool & serve

Let cool 5–10 minutes.
