🍌🧁 Banana Oat Mug Muffins (Oven-Baked in Cups)

Moist, healthy, and perfect for breakfast or snacks!


📝 Ingredients (Makes 4–6 cup muffins)

  • 3 ripe bananas (medium–large)

  • 2 cups rolled oats

  • 2 eggs

  • ¼ cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ½ tsp cinnamon (optional but great)

  • Pinch of salt

  • Optional add-ins (choose any):

    • ¼ cup raisins

    • ¼ cup chopped nuts

    • ¼ cup chocolate chips

    • 2 tbsp shredded coconut


🥣 Instructions

1. Preheat

  • Preheat your oven to 350°F (175°C).

2. Prepare the cups

  • Use oven-safe coffee cups or mugs like the ones in the photo.

  • Lightly grease with butter or spray.

3. Mix the batter

  1. In a bowl, mash the bananas until smooth.

  2. Add the eggs, honey/maple syrup, and vanilla. Mix well.

  3. Add oats, baking powder, cinnamon, salt, and any add-ins.

  4. Stir until fully combined. The batter will be thick.

4. Fill the cups

  • Spoon the mixture into each cup, filling about ¾ full.

5. Bake

  • Place the cups on a baking tray.

  • Bake for 25–30 minutes, or until the tops are golden brown and a toothpick comes out clean.

6. Cool & serve

  • Let cool 5–10 minutes.

  • Enjoy warm or at room temperature.


💡 Tips

  • These muffins freeze well. Just wrap and freeze up to 2 months.

  • For a vegan version, use 2 “flax eggs” + maple syrup.

  • Add extra banana for a softer, more moist texture.
