🥔 Baked Garlic Butter Potatoes

🛒 Ingredients (Serves 4–6)

  • 2 lbs baby Yukon Gold or red potatoes (halved if large)

  • 4 tbsp unsalted butter, melted

  • 2 tbsp olive oil

  • 4–5 cloves garlic, minced

  • 1 tsp salt (or to taste)

  • ½ tsp freshly ground black pepper

  • 1 tsp dried Italian seasoning or 1 tbsp fresh chopped rosemary/thyme

  • 2 tbsp fresh parsley, chopped (for garnish)

  • Optional: ¼ cup grated Parmesan


🔥 Instructions

1️⃣ Prep

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Season

  • In a large bowl, mix melted butter, olive oil, garlic, salt, pepper, and herbs.

  • Toss potatoes until well coated.

3️⃣ Bake

  • Spread potatoes cut-side down in a single layer.

  • Bake 35–45 minutes, flipping halfway through, until golden brown and fork-tender.

4️⃣ Finish

  • Sprinkle with fresh parsley and Parmesan (if using).

  • Serve hot.
