🧀🌿 Baked Feta Chickpeas

🛒 Ingredients (Serves 2–3)

  • 1 can chickpeas, drained & rinsed

  • 1 block feta cheese (180–200g), kept whole

  • 1 cup cherry tomatoes (optional but amazing)

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp chili flakes (optional)

  • ½ tsp dried oregano or thyme

  • Salt & black pepper, to taste

  • Fresh parsley or basil, chopped (for garnish)

  • Lemon zest or juice (optional)


👩‍🍳 Instructions

  1. Preheat oven to 200°C (400°F).

  2. In a baking dish, add chickpeas and cherry tomatoes.

  3. Toss with olive oil, garlic, paprika, chili flakes, oregano, salt & pepper.

  4. Place the feta block in the center of the dish.

  5. Drizzle a little olive oil over the feta.

  6. Bake uncovered for 25–30 minutes, until chickpeas are lightly crispy and feta is soft and golden.

  7. Gently mash the feta and mix everything together.

  8. Finish with fresh herbs and a squeeze of lemon.

  • With toasted sourdough or pita

  • Over rice or quinoa

  • As a warm dip for veggies

  • Tossed with pasta for a quick dinner
