-
Salt and pepper, to taste

1 tbsp lemon juice (freshly squeezed)
-
1 tsp lemon zest
-
1 tsp Dijon mustard (optional, for depth)
-
1 small garlic clove, minced or grated
-
Salt and pepper, to taste
Instructions
1. Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
2. Prepare the Cod
-
Pat the cod fillets dry with paper towels.
-
Place them on the prepared baking sheet.
-
Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika (if using).
-
Top each fillet with 1–2 lemon slices.
3. Bake the Fish
Bake in the preheated oven for 12–15 minutes, or until the fish flakes easily with a fork (internal temp should reach 145°F/63°C).
4. Make the Lemon-Dill Sauce
While the fish is baking:
-
In a small bowl, combine Greek yogurt (or sour cream), dill, lemon juice, lemon zest, mustard, garlic, salt, and pepper.
-
Mix well and adjust seasoning to taste.
5. Serve
-
Plate the baked cod and spoon a generous amount of lemon-dill sauce over the top.
-
Serve with steamed veggies, rice, quinoa, or roasted potatoes.
📝 Tips:
-
Fresh dill gives the best flavor, but dried works in a pinch.
-
The sauce can be made ahead and stored in the fridge for up to 3 days.
-
Cod can be substituted with haddock, halibut, or any white flaky fish.
