1 large avocado, diced

1 cup cucumber, diced (Persian or English works best)

1 cup cherry tomatoes or diced regular tomato

¼ cup red onion, thinly sliced (optional)

2 tbsp fresh parsley or cilantro, chopped

1 tbsp extra-virgin olive oil

1 tbsp lemon juice (or lime juice)

🥗 Instructions

Prep the veggies
Dice the avocado, cucumber, tomatoes, and slice the red onion (if using). -
Mix the dressing
In a small bowl, whisk together:-
Olive oil

Lemon juice

Salt & pepper

(Optional) oregano or chili flakes

Assemble the salad
Add all veggies to a bowl. Drizzle the dressing on top. -
Add feta & herbs
Sprinkle feta and fresh herbs. Gently toss to avoid mashing the avocado. -
Serve immediately
Best enjoyed fresh, but you can refrigerate for 30 minutes if you like it chilled.
