🥑 Avocado Cucumber Tomato Feta Salad

🌿 Ingredients (2–3 servings)

  • 1 large avocado, diced

  • 1 cup cucumber, diced (Persian or English works best)

  • 1 cup cherry tomatoes or diced regular tomato

  • ¼ cup red onion, thinly sliced (optional)

  • â…“ cup feta cheese, crumbled

  • 2 tbsp fresh parsley or cilantro, chopped

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice (or lime juice)

  • Salt & black pepper to taste

  • Optional: a pinch of dried oregano or chili flakes


🥗 Instructions

  1. Prep the veggies
    Dice the avocado, cucumber, tomatoes, and slice the red onion (if using).

  2. Mix the dressing
    In a small bowl, whisk together:

    • Olive oil

    • Lemon juice

    • Salt & pepper

    • (Optional) oregano or chili flakes

  3. Assemble the salad
    Add all veggies to a bowl. Drizzle the dressing on top.

  4. Add feta & herbs
    Sprinkle feta and fresh herbs. Gently toss to avoid mashing the avocado.

  5. Serve immediately
    Best enjoyed fresh, but you can refrigerate for 30 minutes if you like it chilled.
