🥗 Asian-Style Sesame Cucumber Salad

🌱 Ingredients

  • 3 medium cucumbers (thinly sliced)

  • 1 small carrot (julienned or grated)

  • 2 spring onions (finely chopped)

  • 1 tablespoon toasted sesame seeds

  • Fresh cilantro (optional, for garnish)

For the Dressing:

  • 3 tablespoons soy sauce (low sodium preferred)

  • 2 tablespoons rice vinegar (or white vinegar)

  • 1 tablespoon sesame oil

  • 1 tablespoon honey (or maple syrup)

  • 1 teaspoon chili flakes (adjust to taste)

  • 1 teaspoon grated fresh garlic

  • 1 teaspoon grated ginger

  • A pinch of salt


👩‍🍳 Instructions

  1. Prep Vegetables:
    Slice cucumbers thinly and julienne the carrot. Place in a large mixing bowl.

  2. Make the Dressing:
    In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey, chili flakes, garlic, and ginger until smooth.

  3. Mix the Salad:
    Pour the dressing over the cucumbers and carrots. Toss well so the veggies are coated.

  4. Add Sesame Seeds:
    Sprinkle toasted sesame seeds on top and gently mix.

  5. Chill & Serve:
    Refrigerate for 15–20 minutes to let the flavors blend. Garnish with chopped spring onions and cilantro before serving.


💡 Tips

  • For extra crunch, add thinly sliced red bell pepper.

  • If you prefer a lighter version, reduce the soy sauce and sesame oil slightly.

  • Best served cold as a refreshing side dish.
