🥔 Air Fryer Crispy Potato Skins
✅ Ingredients:

3–4 medium Russet potatoes (baked & cooled)

1 tbsp olive oil or melted butter

Salt & pepper to taste

½ cup shredded cheddar cheese (or a cheese blend)

¼ cup cooked bacon bits (or turkey bacon)

¼ cup sour cream (for topping)

1–2 tbsp chopped green onions or chives
-
Optional: garlic powder, paprika, ranch seasoning
🔥 Instructions:
Step 1: Prep the Potatoes

Bake the potatoes ahead of time (400°F/200°C for 45–60 mins or until fork-tender), then let them cool completely.

Slice each potato in half lengthwise and scoop out the center, leaving about ¼ inch of potato on the skin.
Step 2: Season & Crisp

Brush both sides of the potato skins with olive oil or melted butter.

Season with salt, pepper, and optional garlic powder or paprika.

Place skin-side up in the air fryer basket.

Air fry at 400°F (200°C) for 5–7 minutes until crispy.
Step 3: Load Them Up

Flip skins over and fill with shredded cheese and bacon bits.

Air fry for another 3–5 minutes until cheese is melted and bubbly.
Step 4: Garnish & Serve

Remove from air fryer and top each with a spoonful of sour cream and a sprinkle of green onions or chives.
