🥔 Air Fryer Crispy Potato Skins

✅ Ingredients:

  • 3–4 medium Russet potatoes (baked & cooled)

  • 1 tbsp olive oil or melted butter

  • Salt & pepper to taste

  • ½ cup shredded cheddar cheese (or a cheese blend)

  • ¼ cup cooked bacon bits (or turkey bacon)

  • ¼ cup sour cream (for topping)

  • 1–2 tbsp chopped green onions or chives

  • Optional: garlic powder, paprika, ranch seasoning


🔥 Instructions:

Step 1: Prep the Potatoes

  1. Bake the potatoes ahead of time (400°F/200°C for 45–60 mins or until fork-tender), then let them cool completely.

  2. Slice each potato in half lengthwise and scoop out the center, leaving about ¼ inch of potato on the skin.

Step 2: Season & Crisp

  1. Brush both sides of the potato skins with olive oil or melted butter.

  2. Season with salt, pepper, and optional garlic powder or paprika.

  3. Place skin-side up in the air fryer basket.

  4. Air fry at 400°F (200°C) for 5–7 minutes until crispy.

Step 3: Load Them Up

  1. Flip skins over and fill with shredded cheese and bacon bits.

  2. Air fry for another 3–5 minutes until cheese is melted and bubbly.

Step 4: Garnish & Serve

  1. Remove from air fryer and top each with a spoonful of sour cream and a sprinkle of green onions or chives.

  2. Serve hot and enjoy!

  • Add jalapeños, ranch drizzle, or BBQ sauce for a fun twist.

  • Use Greek yogurt instead of sour cream for a lighter version.

  • Want it vegetarian? Skip the bacon and add sautéed mushrooms or black beans!!
